Purple cauliflower is a cool-season biennial cruciferous vegetable. No, they’re not painted or dyed. Purple cauliflower’s color is due to the presence of the antioxidant anthocyanin, which can also be found in red cabbage and red wine. Purple cauliflower is also known as Sicilian Violet, Violet Queen and Grafitti cauliflower.

Purple cauliflower is said to be healthier than natural white cauliflower. But why? Purple cauliflower provides a fair amount of fiber, vitamin A, fol ate, calcium and potassium as well as selenium, which works with Vitamin C to boost the immune system. Cruciferous vegetables such as purple cauliflower are known for their high levels of cancer-fighting phytochemicals know as glucosinolates.

Purple cauliflower dishes and ingredients needed. 

Aloo purple Gobi paratha

  • For the Bread
  • 3 cups flour
  • 1 cup greek yogurt
  • Salt as per taste
  • For the Stuffing (easily adaptable)
  • 250 grams Purple Cauliflower
  • 250 grams Potatoes
  • 1/2 tsp Cumin seeds
  • 1 tsp Ginger-Garlic paste
  • 1-2 green Chillies
  • 1/4 tsp Turmeric
  • 1/2 tsp Lemon Juice
  • 1/2 tsp Garam Masala
  • Salt as per taste

Purple Gobi pakora 

  • 250 gm purple Cauliflower, broken into florets
  • 1/2 cup chickpea flour
  • 1/4 cup Rice Flour
  • 2 tbsp All Purpose Flour
  • Salt as per taste
  • Chili powder as per taste

Purple cauliflower roast

  • 1 large head purple cauliflower, cut into florets
  • 3 1/2 tablespoons ghe
  • 1/4-1/2 teaspoon salt
  • 1 teaspoon Aleppo pepper flakes
  • 1 1/2 teaspoons whole cumin seeds
  • 1 teaspoon whole black mustard seeds
  • 1 tablespoon fresh lemon juice
